A professional who supervises and coordinates activities of workers engaged in processing slaughtering-and-meat-packing byproducts, such as tallow, hides, and cracklings (residual solids from extracting tallow from bone, trimmings, and viscera). Respnsibilities include:

  • Trains new employees in operation of equipment.
  • Observes meters and dials to verify specified pressures and temperatures at various process stages.
  • Moves controls to regulate equipment and correct equipment malfunctions.
  • May supervise trimming and packing of offal products, such as tongues, livers, and tails.
  • May assist in purchase of hides and sales of offal products.
  • Performs other duties as described under supervisor master title.
